Autumn's Egg Month

September is celebration month in the chicken coop here on the farm. After the summer when some hens have taken it easy due to the heat, they come back with full force – and that means fresh, beautiful eggs every day.

When you buy fresh eggs from a local farm in the Grimstad area, you notice the difference immediately: yolk color that is more intense, shells that are stronger, and a taste that really tastes like something.

Best Uses for September Eggs

Boiling and Frying: Small timing mistakes suddenly become noticeable when the egg is this fresh. We recommend cooking from room temperature for the most accurate result.

Baking: Fresh eggs bind better – use them for cakes, bread and baked goods where airiness is important. The high protein quality is noticeable in the result.

Pâté and Mayonnaise: Here it _must_ be fresh eggs. We store them cool, but take them out before use.

Storage

Fresh chicken eggs from our farm in Fjære last longer than store-bought eggs – they have no "travel time" behind them. Store chilled (not frozen), and they keep for several weeks.

Tip: Write the date you received them on, so you remember how fresh they are.
